French Cassoulet

Our French Cassoulet gets its name from the pot it’s traditionally baked in, the cassole, which is often shaped like a wide inverted cone to ensure the greatest amount of luscious crust. This cassoulet is absolutely bursting with flavor from three types of pork, duck confit, and chicken bone broth, and a classic French sausage that is a specialty of Toulouse, a city in southern France.

Ingredients: Ham hock, pork shoulder, pancetta, prosciutto, cannellini bean, duck fat, carrots, yellow onion, garlic, cherry tomatoes, chicken stock, parsley, celery, thyme, bay leaf, salt, pepper, olive oil.
